为开发莜麦多酚,本文以内蒙古莜麦为原料,通过发芽处理,研究莜麦发芽过程中多酚类物质含量及其总还原能力、DPPH.及羟自由基清除能力的动态变化。结果表明,与原样相比,发芽9d的莜麦的总酚含量、总还原能力、DPPH.清除能力和羟自由基清除能力显著增加(p < 0.05)。游离态和结合态多酚的含量分别提高了0.75倍和2倍;总还原能力分别提高了1.88倍和6.53倍; DPPH.清除率分别提高了0.10倍和0.92倍; 羟自由基清除能力分别提高了0.24倍和5.17倍。表明发芽可提高莜麦种子中的总酚含量及体外抗氧化能力,可作为提高莜麦利用价值的有效手段。

To explore the polyphenols in naked oat, we used Inner Mongolia oat, treated with germination, as raw materials, and study the dynamic changes of phenolics content, total reducing capacity, clearance rate of DPPH and hydroxyl radical during its germination. The results showed that free and bound phenolics, clearance capacities of DPPH and hydroxyl radicals, and total reducing capacity of 9th-gemination-samples were all increased significantly when compared with the untreated samples (p < 0.05). The free and bound polyphenol contents in 9th-samples were improved by 0.75 and 2 times, respectively; the total reducing capacities were increased by 1.88 and 6.53 times, respectively. Furthermore, DPPH.scavenging capacities were raised 0.10 and 0.92 fold, respectively, and clearance of hydroxyl radical capacities were improved by 0.24 and 5.17 times. These results suggest that naked oat treated with germination can greatly enhance its total phenolic contents and in vitro antioxidant capacities, which can be used as an effective means to improve the utilization value of naked oats.
